with jalapeños, it’s made just for meee!”
Do you like my little song that I wrote? It’s pretty awesome I know; just keep checking the iTunes music charts, because in just a couple of weeks it will be a bigger hit than Nicki Minaj’s “Anaconda”!
Okay, so maybe I’m not a songwriter, but I do know that this guacamole had me singing and doing a jig of happiness. It has salty and smoky bacon, spicy grilled jalapeños, and creamy avocados…what’s not to love?
Nothing. There’s nothing not to love, so why are you still reading this and not making guacamole?!
3 medium avocados, mashed
5-6 slices of bacon, cooked until crispy and chopped (reserve bacon grease)
1-2 jalapeños, depending on how much of a kick you like, cut in half and seeded
½ cup chopped tomato
½ of a red bell pepper, chopped
1/3 cup diced onion
2 tbsp. fresh, finely chopped cilantro
1 tbsp. lime juice
1 tsp. reserved bacon grease
½ tsp. sea salt
¼ tsp. smoked paprika (optional; but really gives the guacamole that smoky taste)
Pepper, to taste
Plantain chips or raw veggies, for serving
1. Combine all ingredients except the jalapeños in a large bowl.
2. Brush jalapeños with avocado oil (olive oil would also work) and throw on a grill or grill pan.
3. Grill the jalapeños on both sides until there is a nice char on the skin.
4. Finely dice the jalapeños and add to the guacamole.
5. Serve with plantain chips or veggies. Enjoy!
Fun tip/fact: Save the avocado pit and place it in the guacamole once it is prepared to keep the dip from browning as quickly!
